Recipe for my new "Mexican Chicken Dish"
1 large green pepper
cut into 1/4in. strips then cut in half
1 large white onion
cut it top to bottom in 1/4in. wedges
2 cups scliced baby bella mushrooms
12 oz. medium salsa (temp optional)
2 chicken breasts
clean fat off then cut half way
through the breast crosswise at 1.5in.
intervals on both sides of the breast
olive oil
In a 12in. skillet heat 1/16in. olive oil to a medium-low temp. Add onion and pepper, sautee for 2-3 minutes stirring often. Add mushrooms and continue to sautee for another 2-3 minutes still stirring often. Add salsa and raise temp to medium and stir. Heat mixture until it begins to boil. Stir.
Bury the chicken in the mixture and cover. Stir every 2 minutes for 8 minutes. Flip chicken over and cook another 8 minutes or until chicken is done. When finnished you should be able to easily cut the chicken into bite size peices in the pan with your dull flimsy stirring utensil.
Serve with fried potatoes, i recomend 3/4in. cubes, and fresh uncut green beans. |

HI Dawn:
On cleaning bathroom and kitchen faucets I have found that putting a small amount of furinture polish on your dusting rag will make chrome Shine and repel water spots.

Next time I see you I will have to show you how MY mother taught me to fold t-shirts, towels, & sheets. To this day I still do it HER way, not sure why? I should find out how my kids do it, their way or "mom/grandmas way" ?? |
